Our kitchen

We buy from the Chellanam harbour boats at six every morning, then write the menu. If the sea was rough, the menu is short.

The kitchen is built around one long hearth fed with coconut husk and cashew wood. It burns hot and sweet and leaves a smoke you can taste in the fish without it taking over.

Everything else is Kerala: kudampuli for sourness, curry leaf, black pepper from Wayanad and appam made to order.

A table for two with a small lamp, an orchid and wine glasses, fairy lights behind.

The room

Forty seats in an old spice warehouse.

The building stored pepper and dried ginger for a hundred years before we arrived. We kept the teak beams and the iron shutters and added a lot of blue.
